01 / ABOUT THE PLACE
Hanging its noren on the third floor of a building near Yebisu Garden Place, Sushi Seidai (鮨せい大) is a reservation-only Edomae sushi restaurant suited for an unhurried, quietly luxurious evening. The contemporary interior is wrapped in warm wood, featuring a counter where you can watch the chef's craft up close, alongside private dining rooms for secluded meals.
The evening anchors on the omakase course, typically arranged around five seasonal appetizers, twelve pieces of nigiri, and dessert. The opening small plates showcase delicate, ingredient-driven preparations, from a savory sakura shrimp chawanmushi fragrant with dashi to fried seasonal fish. A defining centerpiece of the experience is the eel, cooked directly over the dining room's open charcoal grill. Whether presented as kurikara skewers—crisp on the outside and rich and tender within—or rolled fresh from the embers into nori hand rolls, these preparations make a striking impression midway through the sushi meal.
The nigiri that follows highlights meticulous knife work and seasoning tailored to each seasonal selection. Tuna courses progress seamlessly from lean akami to chu-toro and melt-in-the-mouth o-toro, joined by decadent choices like rich nodoguro and thick cuts of sardine, each harmonizing comfortably with seasoned sushi rice. For the finale, the chef serves house-toasted kuzumochi—crisp on the exterior and chewy within—concluding the progression on a distinctive, memorable note.
The thoughtful drink selection is designed to pair seamlessly with every stage of the menu. Seasonal sake sourced from across Japan can be chosen in consultation with the staff to suit the catch of the day, alongside white wines like Chablis and Sancerre, red Burgundies, craft beer, and Japanese whiskies such as Yamazaki and Hakushu. Fruit liqueurs from Houou Biden and several teas are also on hand, ensuring those opting for non-alcoholic options can fully enjoy their meal as well.
The chef's approachable hospitality and attentive explanations create an easygoing atmosphere, making the counter comfortable even for diners experiencing their first formal omakase. Whether planning a business dinner or an anniversary celebration, securing a table in advance promises a dedicated showcase of seasonal nigiri and binchotan-grilled fish.
